Inside Out Taco Skillet

Mexican food is probably my husbands favorite food category ever. I’m pretty sure that if we ate nothing but Mexican every night of the week, he would be happy! So as you can imagine, tacos are a big hit in the family and we have them often! 

One night, though, we went to make tacos and discovered that we only had a few tortillas. Well, there was always nachos we could make, but we made those often and we were also short on cheese. So what were we going to do?

Well, my husband is a bit of a creative genius when it comes to the kitchen (at least compared to me!). He can take random ideas and make the tastiest food with no recipe. So he takes the few ingredients that we had and came up with this simple, but oh so good taco skillet. It has the taste of tacos, with the simplicity of being a skillet dish (less dishes is always a winner in a RV!). We could make up a skillet, plop in on the table and sit around with a bag of tortilla chips (great for when you’ve eaten all the tortillas, but still have the meat and bean mixture left), and eat to our heart’s content. So started this simple, cheap and super easy recipe that’s now a staple in our house when we’re hungry, but the groceries are low.

In fact, I always have frozen ground beef, taco seasoning (try out this great homemade mix!), black beans, cheese and tortillas on hand, so making this recipe is a cinch! When we have friends or family over, we can also offer a really good snack that is perfect for feeding a crowd and is easy on the budget. How can it get any better than that?

Ingredients
  1. 1 lb. ground beef
  2. 1 c. water*
  3. 2 Tbsp. taco seasoning or 1 batch of our Homemade Taco Seasoning Mix*
  4. 1 c. chunky salsa
  5. 1 (15 oz.) can of black beans, drained
  6. 3 (8 in.) flour tortillas, diced
  7. 1 cup shredded cheddar cheese
Instructions
  1. In a skillet over medium-high heat, brown ground beef.
  2. Add in water and taco seasoning and cook until liquid has thickened.
  3. Mix in the salsa, black beans and tortillas and cook until beans are warmed through, about 1-2 minutes.
  4. Stir in cheese until melted and then serve with a side of tortilla chips.
  5. Enjoy!
Notes
  1. We've only tested this recipe with our homemade taco seasoning mix. If you are using commercial taco seasoning mix, I recommend cutting down the amount of water to 1/2 cup.

Homemade Taco Seasoning Mix

Taco seasoning is one of the main seasonings that gets used in this house. Between regular tacos, inside out taco skillet, and taco nachos, we go through a lot. As a result, we can’t ever seem to keep enough taco seasoning in the house. It seems that every time that we go to make something taco flavored, we’re out. So we eventually decided to start making our own. We always seem to have the ingredients to make this seasoning mix, so we make this instead of running out to buy one ingredient. 

This mix is a bit spicy, and absolutely delicious. If spicy is not your thing, you can tone down the cayenne to 1/8 tsp. and it should be mild enough. When we make taco meat with this mix, we usually brown the ground beef (1 lb.) first, then add a cup of water and this mix. It seems like a ton of water, but with the arrowroot powder in the mix, it thickens up in a couple minutes (as shown below). 

It’s a great recipe that we use constantly in the house and I’m so greatful for my wonderful husband who came up with this recipe for us. If you need a good taco seasoning mix, you should try it out. What would you use this taco seasoning mix for?

  1. 2 Tbsp. chili powder
  2. 1 Tbsp. ground cumin
  3. 2 tsp. arrowroot
  4. 1 tsp. salt
  5. 1 1/2 tsp. paprika
  6. 1/2 tsp. cayenne pepper
Instructions
  1. Add all ingredients to a small seasoning jar. Shake to mix.
Notes
  1. Seasons 1 lb. ground beef. To make taco ground beef, brown the ground beef, then add one cup water and this seasoning mix. Cook until the liquid thickens.

Creamy Chicken Pot Pie

A little bit ago, I had a massive craving for chicken pot pie. I was feeling lazy and not wanting to cook, so I picked up a pre-made chicken pot pie from Trader Joe’s. After waiting for a bit, I finally decided to eat my prize. Yuck! I had forgotten how much I disliked their chicken pot pie! The flavors aren’t what I’m used too and honestly, it was just gross to my palate. 

So what to do? Well, we had two recipes for chicken pot pie in the family. One was simple, since it was made with canned vegetables, a can of cream of chicken soup and pre-made pie dough. Now this was a really good recipe and great for when you’re short on time. However, a little while ago, my mom had tried a new recipe, I think from Taste of Home. It was for a completely from-scratch cheesy chicken pot pie. It looked insanely good! So we took the extra time and made it. My goodness, was that ever a good chicken pot pie! 

So even though I didn’t feel like cooking, my cravings were leading me to the from-scratch recipe. On Saturday, while my husband watched the kids play outside, I made this recipe. I was not happy about all the work, but I did it anyway. (It really isn’t that much work. I was just being lazy. It does take some time but is fairly simple.) When it finally came out of the oven, we all dove in eagerly. 

Wow, it was so worth the extra effort! It’s a creamy, cheesy, saucy recipe that is chock full of veggies and chicken. The homemade crust was flaky and delicious. I don’t think I’ll ever complain about the work again, because it was worth it!

Try this recipe! It is totally worth it, a cheap meal and simple to do. I’m sure your family will love it as much as ours does! (Even our picky children ate every bite.) 

Creamy Chicken Pot Pie

CRUST
  1. 1 c. flour
  2. 1/2 tsp. salt
  3. 5 Tbsp. cold butter, cubed
  4. 3 Tbsp. cold water
FILLING
  1. 1 1/2 c. chicken broth
  2. 2 large potatoes, peeled and cubed
  3. 1 c. sliced carrots
  4. 1/2 c. sliced celery
  5. 1/2 c. chopped onion
  6. 1/4 c. flour
  7. 1 1/2 c. milk
  8. 2 c. shredded cheese
  9. 1 lb. chicken thighs (or breasts), cooked and cubed
  10. 1/4 tsp. Old Bay seasoning
CRUST
  1. Combine flour and salt. Cut in butter until mixture resmebles coarse crumbs. Slowly add water, a tablespoon at a time, mixing with a fork. Gather the dough into a ball and wrap with plastic wrap. Refrigerate for at least 30 minutes.
Filling
  1. Bring broth to a boil and add in carrots, celery and onion. Reduce heat; simmer for 5 minutes. Add in potatoes and continue simmering for another 5-10 minutes or until vegetables are tender. Shake the flour and milk together, add to the pot. Stir constantly over medium heat until the mixture is bubbly and slightly thickened. Add cheese, chicken and poultry seasoning. Cook and stir until all the cheese melts. Pour mixture into a 7x11 pan (or a 10 in. or 2.5 to 3 qt. dish).
  2. On a lightly floured surface, roll out dough to fit the pan. Place on casserole, seal edges and patch any holes. Make several slits in the center.
  3. Cook at 425 for 40 minutes or until crust is browned.

Vegan Banana Snickerdoodles

 

This recipe is definitely an odd one out for me! It is well known in my family that I never could become a vegan. I have a love of butter and cheese that outweighs any attempt to eat “healthy”. Now, I personally don’t believe that eating vegan is good for the body, but kudos to those who put in that effort! So why am I posting a vegan recipe? 

Well, for a little bit, my sister-in-law was vegan. She was coming over to visit and I wanted to provide a meal that she could eat. I made a black bean soup and another side dish (I’ve forgotten what I made). Both dishes were nasty. Vegan cooking is an art form! Without much hope for success, I made these cookies. To my (and especially my husband’s) surprise, they were absolutely delicious! In fact, there was lots of disappointment the next morning when all the cookies were gone (somebody snitched the last two cookies for breakfast)!

Recently, we made them again with the same successful results. They disappeared like crazy! These cookies are so yummy with a strong banana flavor that the cinnamon coating only enhanced. They are moist and soft, thanks to the oil added (we used avocado, but olive oil would work too). This recipe will stay a family favorite, even with them being vegan! It’s great for those times when I’m out of butter or eggs, but still want a sweet treat.

Vegan Banana Snickerdoodles

  1. 2 1/2 c. flour
  2. 1 Tbsp. baking powder
  3. 1/4 tsp. salt
  4. 3/4 c. oil
  5. 1 1/3 c. sugar
  6. 1 Tbsp. molasses
  7. 2 large bananas, mashed
  8. 1 Tbsp. vanilla extract
TOPPING
  1. 3/4 c. sugar
  2. 1 Tbsp. cinnamon
Instructions
  1. Preheat oven to 350. Whisk together flour, baking powder, and salt. Set aside. Beat the oil, sugar and molasses until light, about 1 1/2 minutes. Add bananas; beat well. Add vanilla; beat well. Add flour mixture; beat until just blended. Refrigerate dough for 30 minutes (or up to one week.)
  2. On a plate, combine the sugar and cinnamon. Shape dough into 1 in. balls. Roll in sugar mixture until completely coated. Arrange on a lightly greased baking sheet, 2 in. apart. Flatten cookies. Bake 14-18 minutes. Transfer to wire racks and cool completely.

Indoor S’mores

Have you ever sat there on a rainy fall day, where the air is cool and crisp, and wanted s’mores? How about any time of the year, when where you live doesn’t have any access to a fire for s’mores? We’ve managed to find the perfect solution!

So, when my parents took me camping when I was young, they always packed all the fixin’s for s’mores; but they were for me. We found a similar recipe on a box of cereal and ever since then, my mom always made these for every camping trip. I loved both and still to this day, love this recipe. It’s the perfect recipe when I’m craving s’mores on those cold winter days. It always brings a bit of summer weather feeling into the house.

Indulge in a bit of outdoorsy life brought to the indoor life. You’ll enjoy these and wonder why these aren’t more popular!

  1. 8 c. graham cereal
  2. 1 bag (10 oz.) mini marshmallows
  3. 1 1/2 c. milk chocolate chips
  4. 5 Tbsp. butter
  5. 1/4 c. sugar
  6. 1 Tbsp. water
  7. 1 tsp. vanilla extract
Instructions
  1. Grease a 13x9 pan. Pour cereal in a large bowl. Reserve 1 cup marshmallows.
  2. In a saucepan, melt the remaining marshmallows, chocolate chips, butter, sugar and water over low heat until completely melted. Remove from heat and mix in the vanilla. Pour the chocolate mixture over the cereal and stir until completely coated. Mix in remaining marshmallows.
  3. Pour into greased pan and press firmly. Let cool for 1 hour. Cut into bars and serve!

Easy Baked Beans

What BBQ is ever complete without baked beans? In our house, never! This dish is a staple every 4th of July. It just wouldn’t be a 4th celebration without baked beans! I would say that I even like this more than any of the other dishes (besides the dessert and fruit). 

I was having a housewarming party for the RV (RV warming?), and my mom brought this dish. She heated it in our oven and then took it out to the table. Well, it was a glass table and even though we had a hot pad underneath it, the table shattered from the heat. While we managed to save everything else, the baked beans were gone. I was heartbroken. I literally was trying not to cry because I was so looking forward to having some (I was also 7 months pregnant at this point. Food was a huge deal for me). One of our friends who hadn’t arrived yet picked up some canned baked beans. It was a very disappointing substitute. 

The fun part about these is that these are what I like to call “semi-homemade”; having the baked beans easy to make and just as delicious as ones made fully from scratch. It’s literally cooking up some bacon, sauteing onion in the bacon grease and then combining everything into a pan and baking for about two hours.

  1. 8 slices of bacon
  2. 1 cup onions, diced
  3. 4 15 oz. cans of pork and beans in tomato sauce
  4. 4 Tbsp. brown sugar
  5. 2 Tbsp. Worcestershire sauce
  6. 2 tsp. prepared mustard
Instructions
  1. Preheat oven to 325. Fry bacon over medium-high heat until crisp; drain, reserving 4 tablespoons drippings. Saute onions in remaining bacon grease until tender. Add all ingredients to a 13x9 pan and mix to combine. Bake, uncovered, for 1 hr. 45 min. to 2 hours. Enjoy!

Homemade Queso

This coming Sunday is Father’s Day, so to celebrate my amazing husband, I’m posting about one of his favorite recipes we have (the Instant Pot Hearty Chili is another recipe he loves). Combine the two and my husband is in heaven! So here’s a little back story about my husband eating queso for the first time around me…and how it didn’t turn out like you would think! 

One of the first dates I went on with my boyfriend (now husband) was to a football game. His best friend played, and his sister and sister’s friend did cheerleading for the team. The whole family had gotten involved at first by helping with selling concessions. So, of course, we had to stop by the concession stand and get some food. HoneyBear order nachos. I remember the people behind the counter pumping out this thick, golden yellow goo that was known as queso. Now, I’ve eaten it before, but I think it was at that time that I really started not liking queso. In the dim interior of the concession stand, it almost seemed to glow a faint neon yellow. 

So why am I posting about queso? Well, the answer might surprise you and it definitely doesn’t make any sense. I tried some queso in Texas at the recent family reunion and happened to like it. Encouraged by my finally liking this favorite food of my husbands, HoneyBear began making queso regularly. I didn’t mind and it actually was pretty good.

Now, though, I eat it fairly regularly and for a pretty bad reason. I’m experimenting with being gluten-free (that’s a whole other story) and I feel much better when I don’t eat gluten. Queso is free from any gluten ingredients (that I know of) and I eat plain tortilla chips with it (also gluten-free). So I traded gluten for chemicals. Now, I know this isn’t ideal and I’m working on a recipe that uses real cheese, but for now, this is what I eat.

Plus, this one really does tastes like the queso that is served at most concession stands. It’s nice and thick, but runny enough to serve over chips or to add to chili or hotdogs when it’s warmed up. We use green chilis in this recipe, but feel free to try jalapeños instead to bump up the spicy flavor. If you’re looking to make queso for pennies and not as many chemicals as the stuff sold in stores, this is the way to go! You won’t be sorry you did!

  1. 2 lb. sharp cheddar velveeta
  2. 2 cans (4 oz.) diced green chilis
  3. 1 cup milk
  4. 2 Tbsp. butter
Instructions
  1. Dice the velveeta into 1 in. cubes. Add green chilis to a blender and blend until mostly smooth. Place all ingredients in a medium sized saucepan. Heat over medium-low heat, until velveeta has fully melted; stirring constantly. Serve warm and enjoy!
Notes
  1. You can substitute some or all of the green chilis with jalapeños. The more you substitute, the spicier it will be.

Old Fashioned Macaroni and Cheese

 

When I was growing up, my mom never really cooked from a box. She always did everything from scratch…including macaroni and cheese. My mom always made this delicious mac ‘n cheese that I requested often. It was only at friends houses that I would have the boxed mac ‘n cheese. I never really liked it, and to this day, I prefer the one that my mom made me growing up. 

As I started cooking, I was surprised to discover how easy and simple this meal is. It requires only three ingredients and just a few simple steps to put together. While it can be a bit plain to someone who is used to overly processed foods, my family has discovered that a bit of pepper (regular or seasoned pepper) makes the meal very enjoyable.

You can also add ham, sausage, veggies; the possibilities are endless! Just take the base recipe and add whatever your family loves. Our favorite has been to add ham. Just toss in some chopped ham before it goes in the oven and while it’s cooking, toss a salad together. A quick and easy meal the whole family will love!

  1. 16 oz. pasta
  2. 16 oz. cheddar cheese
  3. 2 cups milk
Instructions
  1. Preheat oven to 350. Cook pasta according to directions. While pasta is cooking, dice the cheese into 1/2 in. cubes. Grease a 13x9 pan. After draining pasta, add half of the pasta to the pan. Add half of the cheese. Repeat layers. Pour milk over the pasta and cheese. Bake for 30-45 minutes, stirring halfway through. Serve hot and enjoy!

Chocolate Sour Cream Muffins

 

What could be better than chocolate first thing in the morning? I can’t think of anything else I’d rather have. Throw in an easy recipe and it’s like a match made in heaven! The only thing better would be someone else making them and serving them to you, hot and just the way you like it. You might like them served in bed too! I just happen to not like being served food in bed (I may be just a bit paranoid that my bed may get dirty.)

My quirks aside, these muffins are delicious! A moist chocolate muffins that melts in your mouth. It’s perfect for those mornings when you want to make breakfast, but need something quick and easy. I let my husband make the elaborate morning meal, but I’m more of a baker and want easy and quick; these are my go to recipe for breakfast. The best thing is, they taste amazing with all purpose flour and the gluten free flour blend that I use. My husband couldn’t even tell the difference!

However, for me, what takes these muffins over the top is the way I serve them up. When they are piping hot from the oven, I cut a X in the muffins (being careful not to cut my silicone muffin liners) and place about 1/2 a tablespoon of softened butter in them. That yummy grass fed butter just melts straight into the muffins, making them a delectable mouthwatering treat that I would love to have every morning.

I dare you try them with butter, they just might be your favorite morning treat too!

  1. 1/4 cup butter, softened
  2. 1/2 cup sugar
  3. 1/4 cup brown sugar
  4. 2 eggs
  5. 1 tsp vanilla extract
  6. 1/4 tsp salt
  7. 1/2 tsp baking soda
  8. 1 1/2 tsp baking powder
  9. 1/4 cup baking cocoa, sifted
  10. 1 1/4 cup all-purpose flour
  11. 1/2 cup sour cream
Instructions
  1. Preheat oven to 350. Line or grease a muffin pan. Cream together butter and sugars until light and fluffy. Mix in one egg at a time, along with vanilla, salt, baking soda and baking powder. Sift cocoa butter into bowl, mixing well until fully incorporated. Alternate additions of flour and sour cream until fully combined. Scoop into muffin tins. Bake 18-20 minutes. Cool in pan for 5 minutes.

Instant Pot Hearty Chili

 

The ultimate comfort food from my childhood! Brown up some beef, add beans, water, and that good ole’ bag of premixed spices. Let it all stew away and you had yourself a good pot of chili. For the longest time, I kept on making it like my mama did. It was so cheap and easy! As we started moving to a more natural lifestyle, I was ready to move on from the pre-packaged mixes. Yet I knew we couldn’t give up chili. It’s always been one of my favorite meals and I’m pretty sure it’s my husband’s favorite food.

So we tried some different recipes. They were not that great. They either had huge tomato chunks, were too watery, had too many vegetables or they had no beans. We were looking for something that was thick, meaty, with beans to fill you up and it of course had to be spicy. I finally found a slow cooker recipe that seemed promising. Without much hope, I made a batch. That batch of chili was so spicy, not even my spice loving husband could eat it! However, he could tell that this recipe had promise. So I made another batch, this time drastically reducing the amount of cayenne. Now that was one good bowl of chili! It’s been our go to recipe ever since. I can make up a pot every week and my husband wouldn’t mind a bit. Over time I’ve made adjustments and changed a few things, the main one being on how it’s cooked.

I recently just got a pressure cooker, the 8 quart Instant Pot. This recipe seemed like the perfect thing to convert to the Instant Pot, as I could make a pot in 30 minutes, unlike the 4-8 hours of the previous recipe. This is helping me to remember to make dinner (since I don’t have remember earlier in the day) and it saves on electricity, which is good, because a lot of RV parks charge you separately for using the power. 

I’ve many compliments on the recipe, so I hope you enjoy this one as much as we have and our friends and family has as well!

Instant Pot Hearty Chili
A thick, hearty chili to fill the belly and satisfy the soul.

  1. 1 lb. ground beef
  2. 1 onion, diced
  3. 1 can (15 oz.) tomato sauce
  4. 2 cans (15 oz.) diced tomato
  5. 4 cans (15 oz.) black beans, undrained
  6. 1 can (4 oz.) diced green chilis
  7. 1/2 tsp. celery salt
  8. 2 tsp. cumin
  9. 3 Tbsp. chili powder
  10. 2 tsp. salt
  11. 4 1/2 tsp. black pepper
  12. 1/4 tsp. cayenne
Instructions
  1. Set Instant Pot to Saute. Add ground beef and onion; cook until meat is browned. Hit the cancel button. Add in remaining ingredients; stir. Close lid of Instant Pot and make sure the vent is closed. Press the Bean/Chili button. After the chili cooks, either quick release or let the pot cool down naturally. Serve hot with grated cheese, maybe some sour cream. Don't forget the cornbread and honey!
To cook in a slow cooker
  1. Brown meat and onion in a skillet over medium high heat. Add to slow cooker. Add remaining ingredients. Stir. Cook on low for 8 hours or high for 4 hours.
