Summer has started off so nice here! While there has been a couple cool days, I’m excited to see temperatures above 70. With the warm weather comes an opportunity to do some fun outdoor activities; barbecues being the #1. What on beat hanging out with family while eating great food? With the 4th of July just one week away, I can hardly wait to stuff my face and enjoy the fireworks. So what could be a more perfect addition to a barbecue than a fruit salad?
A fruit salad is a wonderful light contrast to all the heavy meat, beans and chips normally served. While I love me some good pulled pork sandwiches and easy baked beans, I really appreciate the cooling, sweet fruit that this recipe offers.
There are several ways you can get this salad started, all depending on the fruit you want or have available. For this mix, I went with a standard fruit salad mix of cantaloupe, honeydew, watermelon, pineapple and grapes. For a more patriotic theme, you can do strawberries, blueberries, raspberries, blackberries, or any combo of red and blue fruits. Just use whatever fruit you would like and add the dressing. This dressing is so simple and easy, yet adds just bit of shine, really elevating a simple bowl of fruit into a delicious fruit salad. For a whole five seconds it takes to make the dressing, why not?
So here is one of my favorite ways to enjoy a bowl of fruit and enjoy the warm days of summer and good friends.
- 1 Tbsp. honey
- 1 Tbsp. lime juice
- 1 c. cubed honeydew
- 1 c. cubed cantaloupe
- 1 c. cubed pineapple
- 1 c. cubed watermelon
- 1 c. grapes
- Combine the honey and lime juice in a small bowl.
- Pour over fruit mixture and stir to combine.
- Serve chilled.
